Daftmill ist eine echte Farm Distillery, auf der genauso gearbeitet wird, wie es früher in Schottland üblich war. Im Frühjahr und im Herbst steht die Arbeit auf dem Bauernhof an, in den ruhigeren Monaten im Sommer und Winter wird gebrannt. Die Familie Cuthbert bewirtschaftet den Hof schon seit 6 Generationen, seit 2005 wird professionell Whisky gebrannt. Mit z.T. nur 100 Fässern im Jahr hat sie nur einen geringen Ausstoß. Ungewöhnlich ist die sehr lange Fermentierung mit 96 bis 104 Stunden. Die spirit still fasst gerade mal 1500 Liter. Die Chariot-Gerste wächst auch auf dem Hof. Hier wurde die Gerste am 31. August 2006 geerntet, dann bei Robert Kilgur gemälzt. Destilliert wurde in 2006 und der spirit dann in 1st-fill Bourbon barrels gefüllt und ab ins Warehouse für über 15 Jahre. Insgesamt 28 Fässer ergaben diese bislang älteste Daftmill-Abfüllung für den Weltmarkt mit 5338 Flaschen.

Eine ungewöhnliche Destillerie mit einem wirklich ungewöhnlichen Whisky!

Nase: soft meadow fruits and tinned peaches including the syrup. There’s a pleasing minerality present as well. Lychees, red grapes, all-spice and a vanilla marshmallow creaminess. An elegant Lowland presentation overall. Rice pudding holds the fruity sweetness back and there’s a biscuity element that comes through with time alongside a nuttiness and toffee.

Geschmack: strength provides an oiliness and lip-smacking texture throughout. Plenty of honey and oats. The meadow fruits only come into play towards the finish

Finish: Vanilla obviously and more wood on the finish alongside nutmeg and some foam bananas
